No More Tears When Cutting Onions
Did you know you can stop the water works from happening when cutting an onion…? Ironically, it involves water! Next time you’re cutting an onion keep a cup of water next to your cutting board and dip the knife in the water before making each cut. The water counteracts the the chemical irritants caused by cutting open an onion. Do this and there will be no more tears.
Curious as to why we “cry” when cutting an onion? According to the Library of Congress site, Everyday Mysteries, when onions are cut open Lachrymatory-factor synthase is released into the air. This enzyme then converts the amino acids of the onion into sulfenic acid. The sulfenic acid then rearranges into the chemical irritant syn-propanethial-S-oxide. When the syn-propanethial-S-oxide is released into the air and comes in contact with our eyes it stimulates the eyes’ lachrymal glands which then cause the eyes to water.
