Ch-Ch-Chocolate Chia Pudding!
Ch-Ch-Chocolate Chia Pudding
- 1/4 cup chia seeds
- 1 & 1/4 cup almond milk, unsweetened
- 2 & 1/2 Tablespoon cacao, carob or cocoa*
- 2 Tablespoons natural sweetener such as pure honey or maple syrup
- 1/2 teaspoon pure vanilla extract
- dash of cinnamon (optional)
Directions: In a medium size mixing bowl add almond milk, cacao/carob powder, vanilla, honey and mix well and until there are no clumps. (You may want to taste to see if you’d like to add a little more honey-just a little bit, though!) Then, stir in the chia seeds (I think a fork works best). Place bowl in fridge and allow to set in fridge for 30-45 minutes, stirring occasionally about every 20 minutes. It will begin to thicken up like tapioca pudding. Store covered in fridge for 3-4 days…that is, if it lasts that long!
