Raw Fudgey Brownies Recipe
Eating raw and plant based doesn’t mean just eating salads, smoothies and fruits. No joke, there are raw and plant based variations to just about all of the classics–including decadent desserts like raw Fudgey Brownies!
Raw Fudgey Brownies
1 Cup raw *walnuts
1 Cup raw *pecans or *hazelnuts (or 1/2 cup each)
1/2 cup or more raw cacao or carob powder 1 & 1/2 cup dates, pitted
1/4 cup raw or pure honey or maple syrup 1 teaspoon vanilla extract (optional)
Grind nuts in a food processor until fairly fine and crumbly. Empty into bowl and set aside. Add dates, honey and vanilla to food processor and blend until creamy, scraping down the sides as needed. Add in ground nuts to the date paste mixture in the food processor and pulse until well mixed. Be careful not to mix for too long or the walnuts will release too much oil. Remove mixture from food processor and place in an 8×8 inch (or larger) brownie pan and evenly press down. Refrigerate at least an hour or two prior to serving. Cut into desired pieces and serve. Store covered in fridge up to four days or individually wrapped in plastic wrap and stored in the freezer.
* I’ve made this with only walnuts and they turned out great. So if you only have walnuts on hand you can just use 2 cups of walnuts instead of the 1 cup walnuts and 1 cup of pecans or hazelnuts.
